What green is high in omega 3 fatty acids, vitamin A&C, grows wild and is super yummy?


Make a purslane salad this week!

1 c Purslane
1 c Pea leaves
1 c Mixed Greens
1/2 c pear tomatoes
1 c figs or plums
1/4 shallot
1/2 c corn
1/4 c oil
1/4 c strawberry vinegar

Blend vinegar, oil, shallot & fig or plums until creamy.

Add the rest of the ingredients to a bowl, toss to combine. Add dressing, toss and plate!

  1. I had my first experience with purslane this spring. I thoroughly enjoyed it’s delightful texture and distinct almost citrus flavor. I’ve been shopping regularly here in Macon, GA at our local farmers market where all the fruits and vegetables are grown right here at family farms. We love the option to eat healthier and better. Keep up your mission of teaching and sharing with others the dimension of healthy living.
