Hummus anyone….

Snack time… I have loved hummus for years! I’ve made it with black beans, navy beans, lentils, fava beans, broad beans, mung beans, cilantro, mint, berbere and other flavors I adore.

What’s not to love…? It’s delightfully yummy! I want to share these quick recipes for you to create, share and snack healthily!

Make yourself hummus by soaking beans for two days (rinsing daily), then adding lemon juice, olive oil, and spices, process with enough water to moisten while processing.

Now enjoy your  Hummus with celery, zucchini, carrots, and radishes!

For a twist on your hummus include eggplant…

Clean your eggplant and chop up 1/4 of your beautiful purple eggplant, add to processor, add 1tsp of your favorite spicy pepper or 1/4c of your favorite sweet pepper,  add 1 tsp of oregano and thyme spices. Now puree until smooth adding enough water, if needed to moisten. Next, add 1/4 c hummus, 2tbl olive oil and you have a new dip!
