What green is high in omega 3 fatty acids, vitamin A&C, grows wild and is super yummy?
Make a purslane salad this week!
1 c Purslane
1 c Pea leaves
1 c Mixed Greens
1/2 c pear tomatoes
1 c figs or plums
1/2 c corn
1/4 c oil
1/4 c strawberry vinegar
Blend vinegar, oil, shallot & fig or plums until creamy.
Add the rest of the ingredients to a bowl, toss to combine. Add dressing, toss and plate!
