Tandoori….Spice heaven!

The only thing I can say about this dish is…GET YOUR SELF INTO THE KITCHEN AND TRY IT!


Tandori Sauce:

3 tbl olive oil

9 garlic cloves, minced

3 tbl ginger, grated

2 tbl garam masala

3.5 tsp cumin

2 tsp coriander

3 tsp chipotle pepper

2 tsp turmeric

1.5 c yogurt (cashew, almond or macadamia)

2 limes, zested and juiced

Vegetable mixture:

3 stalks celery, diced

1 yellow onion, diced

1 c red lentils, soaked

1/2 cauliflower, diced

2 largecarrots, cleaned, and julienned

4 portabello mushrooms, cleaned and stem removed and diced

Dice in small pieces celery, onion, carrots and separate cauliflower, slicing in half, lengthwise, place in a large bowl, add lentils and toss to combine. Add sauce to vegetables and toss until combined. Scoop portion into mushrooms, put on place and serve with massaged mustard green salad!
