Salad Liberation

It is important that we not distress our bodies by consuming inappropriate foods, which should be different based upon the different seasons we are living in. One dish that is for every season that we MUST partake in daily is Salad;  for Salad is the food of liberation with so many colors, flavors and showcases the interdependence between plants.

 

1 c broccoli, chopped

1 c yellow squash, chopped

3 yellow tomatoes, chopped

1 carrot, diced

3 tbl parsley, rough chop

2 c spinach

1/2 c arugula

1/4 c brazil nuts

Clean all vegetables, add to large bowl, toss to combine. Add Pear dressing, ENJOY!

 

 

Pear dressing

 

1 c almond milk

2 tbl cashews

1/2 pear

2 scallions

1 tsp thyme

1/8 inch piece of banana pepper or 1/2 tsp cayenne pepper

1 tbl olive oil

1 tbl pear juice

1 tsp lemon juice

1/2 tsp ground mustard seed

1 garlic clove

1/4 tsp oregano

Add all ingredients to blender, puree until creamy, taste.
