Fall Warming Cabbage Soup

Fall Warming Cabbage Soup
7 Carrots
5 Parsnips
1 head Purple Cabbage
1 bunch scallions
3 cloves, garlic
5 sweet potatoes
5 stalks celery
2 tsp red pepper (modern name – Cayenne)
1 tbl cumin
2 tsp coriander
1/4 tsp cardamom
1/4 tsp cloves
2 tsp turmeric
1/4 tsp fenugreek
1/4 tsp ginger
1/4 tsp cinnamon
1/4 tsp allspice
2 c lentils
8 c vegetable broth (homemade) or water
2-3 tbl olive oil
In a large heavy pot, add olive oil, carrots, parsnips, and cabbage, saute for 3 minutes, add scallions, garlic and celery, saute for additional 2 minutes. Add chopped potatoes and seasonings. Stir to combine, cook on medium covered for twenty minutes. Remove top and cook for additional ten to twenty minutes, adding lentils, stirring occassionally. Taste for flavor of broth, if necessary add additional seasonings.
Note: Celery has quite a bit of sodium within it, so you should need NO salt. If so, PLEASE be EASY on the salt sprinkling!!!!!
