Spiced Apple Cider

Spiced Apple Cider
15 braeburn and rainier apples
1 tsp red pepper (Cayenne)
3 tbl cinnamon
3 tbl allspice
2 tsp nutmeg
6 c water
Wash apples, quarter, leave skins and seeds in, add to large pot, add water. Boil for twenty minutes on medium, add spices, continue boiling for 50 more minutes. Turn down to simmer for 2hours, covered to prevent evaporation.
After two hours, remove as much seeds, then place apples to blender with about 1/4 – 1 c apple juice. Blend, and push through a seive or press, add juice back to pot. I add the entire puree back in, stir and simmer for about ten to fifteen more minutes. And begin to enjoy!
Store the rest in a clean mason jar or other container.
