Greens

Choose an assortment of greens when meal planning! Here are a few:

Amaranth, Radicchio, Beet greens, Mustard Greens,  Bok Choy, Collard Greens,  Dandelion, Endive, Plantain leaves, Purslane(see my post on this green), Seaweed, Sorrel, Watercress, Chard

Try this little yummy salad
1 c lentils, soaked
1/2 sweet potato, grated
1 carrot, grated
2 c greens (choose from above)
1 zucchini, sliced
1 c jicama, diced
1 avocado, cubed

Dressing

1/2 c walnut oil
1/3 c pineapple vinegar
2 cloves garlic
1 scallion, minced
1/4 tsp turmeric
1 tsp mustard powder
1 c pineapple juice

Blend dressing until smooth & creamy. Drizzle or massage over greens until half size, tossin other ingredients
