Lemongrass Ice cream

Lemongrass Kumquat ice cream

3 stalks of Lemongrass
1 c Coconut meat
1 c coconut mylk
2 tbl lime juice
Zest one lime
1 tsp vanilla bean
1 c kumquats, diced
Puree lemongrass & juice in food processor until creamy, add coconut meat, puree until creamy add mylk, Vanilla puree until creamy. Stir in kumquats.

Freeze stirring every hour or add to your ice cream maker. Freeze, enjoy!
