Polenta and Vegetables


Polenta with Vegetables

4 c water
1 1/2 c Polenta
1/2 c coconut butter
1 tsp chili powder
2tbl Mrs dash
1/2 tsp sea salt
1 tbl garlic
2 tbl lemon spice seasoning

Boil. Cook stirring constantly for 30 minutes or until polenta pulls away from sides. Turn off. Add olive oil in a large pan or 2 large bowls. Pour polenta evenly. Let cool. Put plate on top of bowl. Turn over and pull bowl gently off. Polenta will be domed circle side up. Now make vegetables.

1 large Parsnip
1 large Orange Bell Pepper
3 large Zucchini
1 1/2 c water
2 tbl olive oil
3 tbl Caribbean Seasoning
1 tbl Italian Seasoning

In a sauté pan, Cook parsnip, spices and water until 3/4 way cooked; add other vegetables and olive oil. Stir. Cook for five minutes, remove and scoop on top of polenta.
