Gluten-Free Week Recipes continues with this delightful breakfast creations! This creation is so tasty, it reminds me of what discovering cheerful looks like!


Caribbean sunshine

½ c quinoa                                          
1 ½ c almond milk
½ c pineapple, chopped                    
¼ c mango
¼ c strawberries                                 
¼ tsp allspice
1 tbl apricot                                       
1 ripe plantain, chopped
¼ c pumpkin seeds                         
2 tbl sunflower seeds
2 tbl almond vanilla yogurt

In a large bowl, add almond milk and quinoa, let soak overnight. In the morning add other ingredients and serve.
