Gluten-Free Day three: breakfast

Pear Cardamom Crisp

5 cups pears, chopped                                  
½ c coconut flour
¼ c almond flour                                              
¼ c brown rice syrup
5 tbl lime zest                                                   
2 tbl lime juice
1 c gluten-free oats                                        
1/3 c grapeseed oil
1 tsp cardamom

 

Preheat oven to 375

Combine pears, zest, juice, cardamom and 3 tablespoons of coconut flour, toss to combine. In a separate bowl add coconut flour, almond flour and gluten-free oats, whisk to combine, add brown rice syrup and grapeseed oil, mix until crumbles. Add fruit mixture to pan and sprinkle over pear mixture. Bake for 15-20 minutes or until golden. Remove and enjoy breakfast!
