Gluten-Free Week: Day 7 Lunch


Good afternoon my friends! Today is my birthday and I decided to create a fun treat in honor of a few flavors I absolutely adore, love and am inspired by!

Sweet Potatoes, Black Beans, Bok Choy, Allspice, Cinnamon, Garlic, Raisins, Pecans and Cashew Yogurt…Deliciousness!!!

Black Bean Wrap with Sweet Potato Salad

Sweet Potato Salad

1 Large Sweet Potato

2 Large Yukon Gold Potatoes

1/4 Sweet Onion, diced

2 cloves Garlic, minced

4 small Bok Choy heads, washed and chopped

1/2 c Raisins

1/2 c Pecans

1/2 c Cashew Yogurt

2 tbl Lemon Juice

3 tbl Coconut Cream

1 tsp Allspice

1/2  tsp Cinnamon

1 tsp Paprika

2 tsp Cumin

1/4 tsp Chili Powder

1 tbl No Salt Seasoning (Trader Joes, is the brand I use)

1 tsp Apple Cider Vinegar

1 tsp Garlic Powder

Boil potatoes in a large pot for about 20-30 minutes. You will need to remove Yukons before Sweet Potatoes, just remind yourself about fifteen minutes into boiling to check and remove if they are ready. Let Yukon Potatoes rest and when cool enough, peel skin off. Chop Yukon Potatoes and add them to a large bowl. Next, add onion, garlic, bok choy and 1/2 raisins and 1/4 pecans. Now, Sweet Potatoes should be ready to remove from pot. Turn off stove top, let Sweet Potatoes cool, while cooling, add Cashew Yogurt, Lemon Juice, Coconut Cream, Allspice, Cinnamon, Paprika, Cumin, Chili Powder, No Salt Seasoning, Vinegar and Garlic Powder, whisk to combine. Now, peel skin from Sweet Potato, chop and add to bowl with potato mixture. Pour 1/4 – 1/3 of dressing onto Salad, and gently combine together. Add additional dressing if necessary. When finished stirring, sprinkle remaining Raisins and Pecans on top. Set Aside.

Black Bean Wrap

1 c black beans, cooked

1 c kale, washed and chopped

2 tbl Orange Juice

3 tbl Lime Juice

3 tbl Olive Oil

2 tbl Scallions, washed and chopped

1 Avocado, sliced

1/4 Jalapeno, sliced and diced

4 Collard Green Leaves, washed and bottom part of stem cut off

Place your kale in a large bowl, with orange juice, lime juice, and Avocado Oil. Massage until half size. Set aside

On a plate add one Collard Green Leaf, top with kale, black beans, scallions, Jalapeno and Avocado, wrap. Add salad to plate. Enjoy
