Heading into this evening, the end of Gluten-Free week is bittersweet for me, because this has been so fun, creating flavors that are different, yet simple and creative as well as that inspire healthy meals while also learning how to be gluten-free with ease. I wanted to end this evening with another simple and flavorful dish that is reminiscent to Thai culture and west Indian culture combined for me. Orange Coconut Vegetables with Sesame Scallions Noodles
2 Oranges, juiced
1 c Coconut Cream
2 tsp Allspice
1 tsp Cinnamon
1 tsp Paprika
1 tsp Chili Powder
1 tsp Mustard Powder
2 tsp Oregano
1 medium Onion, diced
5 cloves Garlic, chopped
2 tbl Olive Oil
2 c Cauliflower, chopped
1 Red Bell Pepper, chop
3 Carrots, washed, peeled and diced
2 Zucchini, chopped
1/4 c water
2 tsp Sesame Oil
2 tbl Sesame Seeds
1/4 c scallions, washed and chopped
4 oz Rice Noodles
Wash and cut vegetables; Add carrots to sauté pan with olive oil, sauté carrots for five minutes, then add 1/4 c water, cover and let cook for 5 more minutes; add remaining vegetables, 1/4 c water and cover, cook for 5 minutes.
In a medium bowl, add spices, coconut cream, Orange Juice and olive oil, whisk until combined. Pour over vegetables, let simmer covered for ten minutes. While vegetables are simmering add a large pot to stove top with 3/4 full of water.
When water begins to boil, add rice noodles. Cook for 5-7 minutes or according to instructions. Stir consistently. Once noodles are al-dente, remove and strain in colander.
In a bowl, add noodles, scallions and drizzle sesame oil on top, toss to coat all noodles.
Portion out noodles into bowls, add a scoop of Orange Coconut Vegetables, sprinkle with Sesame Seeds
