LENTIL CURRY SOUP
1c Red Lentils
2 c veggie broth
1 c Coconut Milk
1 tbl Red Curry Paste
2 tsp Coriander
1 tsp Cumin
1/2 tsp pink sea salt
1 tsp Garlic
1/2 tsp Ginger
1/2 tsp Cinnamon
1 jalapeño pepper, chopped
1 Yellow Bell Pepper
1 Sweet Potato, peeled and chopped small baked
1 c Okra, washed and chopped into 1/4
Yummy deliciousness for you to try!
First, add sweet potatoes covered to 400 preheated oven drizzled with olive oil for 20 minutes. You want them cooked 3/4 way through!!!
Next, cook lentils and vegetable broth;
Now, add coconut milk and spices, let it simmer with your veggies for about fifteen or until potatoes are done.
Add, cumin, coriander, ginger, curry paste, peppers and cinnamon. But if you want the lentils whole cook half lentils as above then add lentils and veggies.
Add okra and peppers last five to seven minutes so they don’t get too slimy
