Cabbage Beet Salad w/ Creamy Caper Dressing
1/4 Purple Cabbage, sliced thinly 1/4 Green Cabbage, slices thinly 1/2 Apple, washed, cored and diced into small pieces 2 beets, cooked, sliced into small rounds 1/4 c cooked Lentils 4 tbl Capers 3 tbl White Wine Vinegar 1/3 c Almond Milk 1/4 c Olive Oil 2 tbl Mustard 1/2 tsp Black Pepper
Add cabbage, apples, beets, lentils to a large bowl, toss to combine
In a medium bowl add Capers, Vinegar, Milk, Oil, Mustard, Black Pepper, whisk to combine. Toss salad and dressing. Add 2 c to plate. Enjoy!
