SpringUp30: Week One Day Five SAUTÉED BEET GREENS, SHALLOTS & MARINATED TOMATOES OVER SEASONED GRITS

Sautéed Beet Greens with Shallots and Golden Tomatoes over Grits

Beet Greens

1 bunch Beet Greens, washed and pay dry
1/2 small shallot, sliced thin
3 green onions, diced
2 cloves Garlic, minced
1 tsp chili powder
1 tsp Sea Salt
1 tsp mustard powder
1 tsp Italian seasoning
1/4 tsp cloves
1/4 tsp allspice
1/4 tsp ginger
1/4 tsp cinnamon
1 tsp paprika
2 tbl olive oil

Wash and pat dry greens, chop greens and stalks, separate greens from stalk.

Mix all spices together, set aside

Sauté 2 tsp spice mix, chopped stalk and green onions for three minutes, add to plate, set aside

Add greens, 1 tbl spices and shallots to pan, sauté for three minutes until slightly wilted. Turn heat off and cover.

Marinated Golden Tomatoes

1 c Golden cherry tomatoes (you can use any tomato of choice)
1 tbl olive oil
1 tsp paprika
1tsp garlic
1 tsp Italian seasoning

Wash tomatoes and slice in halves, toss in spices and olive oil

Grits

1/2 c grits
1 c water
1 tsp spice (spice mix from Beet Greens)

Boil water, add grits, turn heat down to low, add spices. Turn continuously to prevent lumping. If you like your grits soft cook for about three to four minutes but if you like them hard, cook them for 4-5 minutes. These I did for about 3 minutes. Turned the heat off and covered until I was ready to use

Assemble: 1/2 c grits to your plate, 1 c beet greens on top of your grits, too with 1/4 of stalks and onions, lastly add a few tablespoons if tomatoes!
