Week Two Day Four: Zucchini Lentil Cakes


Oh my goodness, is all I can say, these are so delicious I ate three! Don’t judge me! Please enjoy and share photos and comments!

Zucchini Lentil Cakes

Lentil Zucchini Cakes

1 c cooked Lentils
2 medium Zucchini, granted
1 c masa flour (you can use your preferred flour)
1 tsp Chili Powder
1 tsp Cumin
1 tsp Sea Salt
1 tsp mustard
1 tsp Paprika
2 cloves garlic, diced
1/4 onion, diced small
1/4 c mashed potatoes

Mix all ingredients together, form into patties.
Add a large pan to your stovetop, turn onto medium heat, let pan warm for 2-3 minutes. Add three patties, flatten to pancake size, about 1/2 inch thick. Cook for 2-3 minutes on each side or until golden brown. These can also be baked on parchment lined baking sheet for 10-15 minutes in a 325 preheated oven!
