I wanted to share a vitamin and mineral rich snack with you!
It’s sunshiny today and you may not feel like cooking for long, try this and head outdoors!
Golden tomatoes and Lentils
1/2 c cooked Lentils 1 small Onion, chopped 1 tbl Olive Oil 2 tsp Thyme 2 tsp Paprika 1/2 tsp Turmeric 2 tbl Apple Cider Vinegar 1 c golden tomatoes, chopped 1/2 tsp mustard powder or 1/4 tsp mustard
Add pan to stove top on medium, let warm for 2 minutes;
add oil, onions and sauté for 3 minutes, add lentils and spices, sauté additional 2 minutes.
Turn off heat, add tomatoes, toss. Enjoy over a bed of cabbage!
