Red Moon Stew



Greetings beautiful beings and welcome to Week three, Day four! Enjoy this lovely stew!

Red Moon Stew

3 c Mushrooms, cleaned and chopped
1 onion, chopped
3 cloves, garlic
2 c broccoli florets & stalks
2 carrots, chopped
2 sweet potatoes, chopped
1 parsnip, chopped
3 celery stalks, chopped
1/4 cup uncooked brown rice
1 tbl cayenne pepper
1 tbl cumin
1 tbl apple cider vinegar
1 tbl Italian seasoning
1 tsp turmeric
1 tbl coriander
1 tbl paprika
1 tsp tomato paste

Add a stock pot to stove top on medium-high heat.
Add all ingredients except broccoli, to rice and vegetable broth or water. Boil for 10 minutes, covered then continue cooking on low until vegetables are tender, about 20 minutes, adding more water if necessary.
Add broccoli, cover and cook for 5 more Minutes. Turn off heat. Serve
