Squash Carrot Remoulade Salad
1 Yellow Squash, washed and ends cut off
1 Carrot, washed and peeled
¼ c golden tomatoes, washed and sliced in half
2 tbl Lime juice, fresh squeezed
1 tsp Paprika, Italian Seasoning, Black Pepper
¼ tsp Sea Salt
¼ c Cashew Mayo
1 c Chard Leaves, washed
Slice thin or use a mandolin to cut squash and carrot into fettucine
type strings, add to large bowl;
In a separate bowl add lime juice, spices, cashew mayo, whisk until
combined, add 3 tbl to bowl, toss together, set aside
On a cutting board, add chard leaves, rough chop into bite size
pieces, fold into salad. Add additional dressing if desired.
Sprinkle additional spices if desired. Enjoy
