Jeera Corn Cakes


Love South American food? Enjoy this recipe inspired by my love of South American culture, Caribbean culture and West Indian culture!

Corn Cakes w/Pinto beans

1 1/2 c masa flour
2 tbl onions, chopped small
3 cloves garlic, minced
1/4 red bell pepper, washed, seeded and chopped small
2 tbl. Cumin
1 tbl apple cider vinegar
1 tbl paprika
1 tsp chili powder
1 tsp mustard powder
1/4 c organic GMO corn
1 1/2 c vegetable broth
1/2 tsp cinnamon

Mix masa, vinegar, spices & veg broth together.

Add remaining ingredients, mix to combine

Make into patties

Add a large skillet to stove too on medium heat, let warm for 60 seconds

Add 2-3 corn cakes. Cook for 2 minutes rotating the pan a couple times on each side to prevent sticking. Flip and Repeat until each is cooked.
