Congolese Vegetables

Congolese Vegetables

1/2 c Broccoli
1 medium Carrot, washed, peeled and sliced in thin rounds
1 small Potato, washed, peeled, sliced thin into thin rounds
1 c Peas
1/4 c Yellow Onion, peeled and sliced thin
3 Garlic Cloves, peeled and chopped small
1/4 Squash, washed and sliced thin
1/4 Red Bell Pepper, seeded and chopped
1 c Lentils, cooked
1/2 c Quinoa, cooked
1/2 tsp turmeric
1 tsp sea salt
1/2 tsp cinnamon
1/2 tsp black pepper
1/4 tsp cumin
1/4 tsp mustard
3 c coconut milk

In a pan add coconut milk, spices, mustard and warm on medium for 2 minutes; add all vegetables, simmer on medium low covered for ten minutes, stirring occasionally. Remove from stove top, fold in lentils.

In a bowl add quinoa,top with vegetables. Enjoy
