Vegetable Khichdi


Happy #springup30 my beautiful participants! WE MADE IT HAPPEN! and inspirations! NOW ENJOY THIS DELICIOUS MEAL!

Vegetable Khichdi

1/2 c Quinoa, cooked
1 c lentils, cooked
1/2 c peas or green beans
1 medium potato, diced
1 c broccoli
1 small red onion
1 tbl cumin
1 tsp cinnamin
1/4 tsp cloves
1/4 tsp cardamom
1 tsp chili powder
1 tsp sea salt or lava salt
1/2 tsp turmeric
1/4 tsp ginger
1 1/2 c water or vegetable broth

Cook lentils and quinoa separately. Set aside

Sauté onions and potatoes for five minutes, add beans, cook for five more minutes, add remaining vegetables and seasonings, stir to combine and coat

Add vegetable broth or water. Simmer covered for 10 minutes. Add lentils, raisins and quinoa, stir to combine.

Remove from stove top until ready to enjoy!
