Malawi Stuffed Zuchini


Malawi Stuffed Zucchini and Yellow rice

1 large Zucchini, sliced in half lengthwise, remove some of flesh, chop
1 c cauliflowers, sliced
1 carrot, washed, peeled and diced
1 c coconut milk
1/4 c pumpkin seeds
1 tsp Paprika
1 tsp Lime juice
1 tsp Italian Seasoning
1 tsp Black Pepper
1 c chard leaves
1 onion, diced small
1/2 c peas
3 tbl olive oil

In a large pan add carrot, onions, cauliflower, lime juice, olive oil, sauté for 5 minutes; add zucchini insides, peas, coconut milk and spices, sauté stir to combine. Cover and turn down to low, simmer 5 minutes; stir in chard; turn off stove top, add vegetables to zucchini.

Serve with Yellow Rice
