Who doesn’t love the many ways to enjoy POLENTA? Well I really want you to try this one!

1 c polenta
3 tbl coconut oil
1 tbl rosemary
1 tbl oregano
3 c water
2 tbl garlic powder
1 tbl cinnamon
1 tbl sea salt
1 tsp pepper
1c Panko or regular bread crumbs (optional)
1/4 c olive oil to brush fries
Boil water, add polenta and seasonings, begin whisking turn down to medium low.
Whisk polenta continuously to prevent clumping; about 15 minutes. Add oil, stir to combine. Turn off stove top.
Pour Polenta into pan no more than 2 inches deep, spread with spatula evenly. Let cool, about 60 minutes.
Chop polenta into fries, brush with oil
Roll into Panko or bread crumbs, repeat until all fries are crumbed
Bake on 450 for five minutes on each side or until golden brown on each side
Sprinkle with seasoning of choice
