Seven days of cookies:

Cornmeal Thyme Currant Cookies

In celebration of seven days of cookies, this thyme cookie creation develops into two distinct textures as it bakes, a soft chewy center surrounded by crispy edges! This cookie is filled with thyme, Seville oranges, nutmeg, my special Glutenfree flour blend, unrefined sugars and an enormous amount of love!

2 3/4 c glutenfree flour
1 c cornmeal
1 tsp baking soda
1 tsp nutmeg
1 tsp sea salt
1/2 c Grapeseed oil
1 1/4 c unrefined cane sugar
3 tbl flax seeds + 3 tbl warm water
3/4 c currants
1/4 c fresh thyme
1 tbl Seville orange zest
1 Seville orange, diced

Combine dry ingredients, whisk
Mix oil, sugar, flax and water
Add dry ingredients to liquid, mix until combined, add zest, currants, thyme and orange. Mix until combined
With a tablespoon add to cookie sheet pan. Bake on 350 for 5-7 minutes
