Seven Days of Cookies: White Chocolate Fig Cookies

1 c vegan brazilnut butter (or other vegan fat)
1 c Muscavado sugar
1/3 c date sugar
2 tbl ground pumpkin seeds
2 tbl mashed sweet potatoes
1 tsp vanilla
3 1/2 c glutenfree flour
1 tsp b. soda
1/4 tsp b powder
1 tsp cinnamon
1 2/3 c White chocolate chips
2 c figs, chopped

Combine all dry ingredients, sift, set aside

In mixing bowl, beat until fluffy, butter, sweeteners until light and fluffy, add vanilla, pumpkin and potatoes, mix.
Fold dry ingredients in
Fold in white chocolate chips and figs.
Bake on 325 for 7 minutes. Remove, let cool.
